The Chardonnay Expression 2024 from Domaine Saint Hilaire is a pure and vibrant IGP Pays d’Oc white wine, crafted without oak to highlight the freshness and finesse of this Mediterranean terroir.
Pale gold with green hues, it offers delicate aromas of orange blossom, citrus and white flowers. On the palate, it is crisp and well-balanced, combining bright fruit with subtle minerality and a refreshing finish.
The grapes are harvested at night to preserve aromatic precision. After cold settling (débourbage à froid), fermentation takes place in stainless steel tanks at 16–17 °C in several batches with selected yeasts. No malolactic fermentation is carried out, ensuring natural tension and freshness.
The wine is aged for 3–4 months in stainless steel to maintain purity and texture. The clay-limestone soils give the wine its characteristic balance of fruit richness and mineral finesse.
