After a three-month tank fermentation, the wine undergoes its second fermentation in bottle and ages for a minimum of one year on the lees. Crémant de Bourgogne “Blanc de Blanc” is a fresh, elegant and refined sparkling wine that highlights the purity and precision of Chardonnay. The wine shows a pale golden colour with fine, persistent bubbles. The nose is bright and expressive, dominated by lemon, lime and delicate white-fruit notes, complemented by a mineral touch derived from the clay-limestone soils of the vineyard.
On the palate, the wine offers everything expected from a high-quality Blanc de Blancs: crisp acidity, citrus brightness, a clean mineral line and an elegant texture. The mousse is fine and integrated, giving the wine a silky, refreshing lift. The citrus profile continues throughout, supported by vibrant freshness and clear definition.
The grapes are entirely hand-harvested, and only the first pressings are used for this cuvée — a guarantee of finesse and aromatic purity. The first alcoholic fermentation takes place in stainless-steel tanks for about three months to preserve the wine’s clarity and fruit expression. The second fermentation occurs in bottle following the traditional method, and the wine ages for at least one year on its lees, developing subtle complexity and finesse in the bubbles.
